Fluffy Blueberry Pancakes
Soft, fluffy, and packed with juicy blueberries, these homemade pancakes are perfect for a weekend breakfast or brunch. Serve them warm with maple syrup and fresh berries.
Ingredients
- 2 cups (250 g) all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1¾ cups (420 ml) buttermilk
- 2 large eggs
- 4 tablespoons (55 g) melted butter
- 1 teaspoon vanilla extract
- 1 cup (150 g) fresh or frozen blueberries
- Butter and maple syrup, for serving
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are perfectly fine.
- Gently fold in the blueberries.
- Heat a lightly buttered skillet or griddle over medium heat.
- Pour about ¼ cup of batter for each pancake.
- Cook until bubbles appear on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes.
- Serve warm with butter, maple syrup, and extra blueberries.
