Fluffy Blueberry Pancakes

Soft, fluffy, and packed with juicy blueberries, these homemade pancakes are perfect for a weekend breakfast or brunch. Serve them warm with maple syrup and fresh berries.

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1¾ cups (420 ml) buttermilk
  • 2 large eggs
  • 4 tablespoons (55 g) melted butter
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) fresh or frozen blueberries
  • Butter and maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are perfectly fine.
  4. Gently fold in the blueberries.
  5. Heat a lightly buttered skillet or griddle over medium heat.
  6. Pour about ¼ cup of batter for each pancake.
  7. Cook until bubbles appear on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes.
  8. Serve warm with butter, maple syrup, and extra blueberries.
